I love tortilla pizzas because they’re so easy to make…and so much healthier than delivery. Make it a family favorite by allowing everyone to personalize their pizza with their favorite veggies. Yum!

This recipe makes 1 serving
Ingredients:

FOR THE SAUCE:

  • 2 tablespoons tomato sauce
  • Pinch of oregano
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt and pepper to taste

FOR THE PIZZA:

  • Olive oil spray
  • ¼ cup broccoli florets
  • ¼ cup yellow peppers, diced
  • ¼ cup onions, sliced
  • ¼ cup bella mushrooms
  • 1 large, low-carb tortilla with no more than 100 calories and preferably whole grain
  • 1/8 cup reduced-fat mozzarella cheese
  • Salt and pepper to taste
Preparation:

Mix all the sauce ingredients together in a small bowl. Set aside.

Set oven to broil.

Heat a large sauté pan over medium heat and spray pan with the olive oil spray. Sauté all vegetables together for 2 to 3 minutes, or until they become translucent.

Place the tortilla on a baking sheet and put in oven on the middle rack (it may burn too easily on the top rack). Cook under the broiler for 3 to 5 minutes total, flipping after each minute, to get tortilla crispy. (Note: Ovens will vary so watch carefully so tortilla doesn’t burn.)

Remove baking sheet with tortilla from the oven and spread 2 tablespoons of the prepared tomato sauce on top, covering the majority of the tortilla except for about ¼ inch from the edge all the way around.

Add the veggies to the tortilla then sprinkle on the mozzarella cheese. Season with salt and pepper. Place pizza back in the oven under the broiler for 1 minute. Remove pizza from the oven, let cool slightly to allow it to crunch up more, cut into 4 slices and enjoy your personal pizza.
