These are GOOD— we can’t stop making and eating them. They’re like little frozen gems of peanutty-banana-y goodness that hit all the right spots, whether you’re in need of a mid-afternoon pick-me-up, a post-workout refuel, or simply craving a gently sweet treat. But fair warning: once you take that first bite, you’ll find it hard to resist reaching for more. A few important notes about the recipe prep below…

• You can add finely diced strawberries into the mix for extra flavor and texture. See reference picture below.

• It’s VERY important to avoid biting into the frozen balls straight from the freezer, as you’ll hurt your teeth. Instead, remove the balls from freezer and let them sit and slightly soften for ~4 minutes before enjoying. Or, you can pop in your mouth from the freezer and suck on them as they’ll soften quickly and melt in your mouth.

• Before freezing, you can sprinkle on crushed nuts, seeds, shredded coconut, crushed graham cracker… or drizzle melted chocolate or PB over the top halves. There are so many fun variations.

• The nutrition information is provided for one ball. I’d say a serving is 3 balls, which provides 90 calories, 10 grams protein, 3.5 grams fiber.

Frozen Peanut Butter Banana Protein Balls

They’re like little frozen gems of peanutty-banana-y goodness that hit all the right spots, whether you’re in need of a mid-afternoon pick-me-up, a post-workout refuel, or simply craving a gently sweet treat.
Servings: 20 1-inch balls
Prep Time: 10 minutes
Total Time: 1 hour 10 minutes

Ingredients
 

  • 1 ripe banana
  • ¾ cup vanilla Oikos Triple Zero Greek Yogurt, or 1 single-serve container
  • 1 cup PB2, or PB-Fit peanut butter powder
  • 3 strawberries, finely chopped, optional

Instructions
 

  • Add the banana to a small mixing bowl and mash it until smooth. Add the yogurt and blend.
  • Stir in the peanut butter powder, mixing until smooth and no dry flour streaks remain. Mix in the optional strawberries.
  • Gently roll the batter into 20 large balls; the batter will be sticky, I find it’s easiest to form the balls by rolling between the palms of your hands. The balls should be ~1-inch in size.
  • As you form each ball, place them on a plate or small baking sheet lined with parchment paper (the parchment paper helps prevent sticking and provides easy removal once they’re frozen).
  • Stash in the freezer for an hour or so. Once frozen, transfer to a freezer bag to free up space.
