If you love campfire s’mores, then you are going to flip for these bite-size chocolate-marshmallow cupcakes. They’re simple to make and filled with nostalgic deliciousness. Make a batch and enjoy!

This recipe makes 24 Servings
  • 1½ cups white whole-wheat flour (or whole wheat pastry flour)
  • ½ teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 6 tablespoons unsweetened cocoa powder
  • ¾ cup unsweetened applesauce
  • ¾ cup skim milk
  • 3 egg whites
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark chocolate chips
  • 24 mini graham crackers (like Teddy Graham’s or Annie’s Bunnies)
  • 24 mini marshmallows

Preheat oven to 325˚ and spray mini muffin tin with oil spray.

In a large bowl, whisk together flour, kosher salt, baking powder, baking soda and unsweetened cocoa powder.

In a separate bowl, whisk together unsweetened applesauce, milk, egg whites, sugar and vanilla extract.

Add wet ingredients to dry ingredients and fold the batter until just combined.

Pour evenly into the prepared mini muffin tins.

Bake for 18 to 20 minutes or until toothpick inserted into middle of a muffin comes out clean.

Top each muffin 1 to 2 dark chocolate chips (they should get a little melty), then “stick” on 1 mini graham cracker and 1 mini marshmallow. Enjoy!
