Add life (and healthy fat) to rice cakes by topping with avocado—do so and you’ll elevate a simple snack to a true treat. My youngest daughter, Ayden Jane, gave it a spicy flair with a bit of hot sauce and red pepper flakes, but feel free to omit or top with your own favorite seasonings. Enjoy!

This recipe makes 1 serving

• 2 rice cakes
• ½
avocado, diced
• 1 tablespoon lemon juice
• Hot sauce, to taste
• Red pepper flakes (optional)


Spread rice cakes with diced avocado. Squirt lemon juice on top plus an optional dash (or two) of hot sauce. Sprinkle on salt and pepper to taste. Add red pepper flakes if desired.
