This dressing is a snap to prepare and is loaded with both flavor and health perks, thanks to the olive oil (a source of healthy fats), garlic (which may help protect against arthritis) and chia seeds (which contain omega-3 fats). Use it to dress your greens to kick up the nutritional value of your bowl.

This recipe makes about 3½ servings
  • 1 clove minced garlic
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons chia seeds
  • ½ teaspoon Dijon mustard
  • ½ teaspoon apple cider vinegar
  • ⅛ teaspoon honey
  • ⅛ teaspoon fresh ground black pepper
  • ⅛ teaspoon salt
  • ¼ cup extra virgin olive oil

Add all ingredients except oil to a bowl and mix well.

Slowly drizzle oil into the bowl while whisking vigorously.

Makes about 7 to 8 tablespoons
