Cucumber Lobster Rolls

At just 30 calories a pop, this low-carb lobster roll spin makes a gorgeous presentation.

Ingredients
 

  • 1 pound cooked lobster meat
  • ½ cup light mayo
  • 1 medium celery stalk, finely chopped
  • 3 tablespoons lemon juice
  • 6 tablespoons finely chopped parsley
  • ¼ cup finely chopped chives
  • Dash of tarragon, optional
  • Salt and black pepper to taste
  • 4 to 5 cucumbers

Instructions
 

  • Mix mayo with chives, parsley and optional tarragon. Set aside half for cucumber assembly.
  • Mix first half of mayo mixture with celery, lemon juice, and lobster meat. Add additional salt and pepper to taste.
  • To assemble cucumber rolls: thinly slice cucumber lengthwise using a mandolin slicer, wide vegetable peeler, or knife. Spoon about ½ teaspoon of the spiced mayo mixture on each slice (there will likely be mayo left over).
  • Then, add a small batch of lobster salad on one side of each cucumber slice and roll until it’s completely wrapped. Secure each cucumber roll with a toothpick. When you’re ready to eat, remove toothpick and enjoy.
