You are minutes away from an icy, nostalgic treat that screams “Summer is coming!” ✨

Here’s what you need⤵️

• 2 cups frozen pitted cherries 
• ½ cup frozen pineapple chunks 
• ½ cup @lacroixwater Cherry Blossom Sparkling Water 

Add the frozen fruit to a high-powered blender. Pour in LaCroix and purée until just thick and smooth. Stop and scrape the sides if the contents don’t blend easily (you can add a splash of extra LaCroix if you need more liquid.). Enjoy straight from the blender as delicious cherry sorbet….. OR scoop into 4 single-serve ramekins or a pint container and place in the freezer to harden like ices for a few hours to overnight.

Have you guys tried it yet? I gotta say, it lives up to the hype! @lainiecooks_ 👏👏

This strawberry cheesecake version is DELICIOUS 🍓😍

Here’s how to make it⤵️
• 24 ounces 1% cottage cheese (The original recipe uses full fat cottage cheese, but I tested it with 1% for a lighter rendition and it’s GREAT!)
• 2½ heaping cups sliced strawberries, divided*
• ½ cup honey

*2 heaping cups sliced; ½ cup finely chopped to be added right before freezing

Add cottage cheese, 2 heaping cups strawberries and honey to a high-powered blender or food processor and puree until smooth. Pour mixture into a loaf pan or freezer-friendly container.

Blend the remaining ½ cup chopped strawberries throughout the mixture using a spoon. Cover and place in the freezer for at least 4 hours. Let it sit on the counter for about 15 minutes to soften before scooping and serving.

Make this ice cream STAT🍦
• 4 large ripe bananas, peeled and frozen
• Splash of milk (almond milk, coconut milk, soy milk, or cow’s milk)
 
Break the frozen bananas into large chunks and place in the food processor. Puree the bananas until they are completely smooth and no frozen chunks remain. If the bananas are too hard to blend, add a splash of milk for easier pureeing.
 
Scoop the ice cream into small bowls and serve immediately or cover in plastic wrap and freeze. If you’re saving the ice cream for a later time, remove the bowls from the freezer about 5 minutes before serving to slightly soften.

This golden spin on my classic tahini dressing has pain-relieving power, thanks to the addition of ground ginger and turmeric ✨  
 
Here’s what you need to make a heaping ½ cup... to drizzle on your salads, protein bowls, and roasted veggies all week long! ⤵️
 
• ¼ cup tahini (make sure it’s well blended before measuring)
• 2 tsp extra virgin olive oil
• 2 to 3 Tbsp lemon juice
• 1 tsp ground turmeric ⭐️ 
• 1 tsp ground ginger
• ¼ tsp salt
• Pinch black pepper or more to taste*
• 2 to 3 Tbsp warm water
 
*Don’t skip this step as the pepper helps boost the absorption of turmeric!
 
Mix the tahini, olive oil, lemon juice, turmeric, ginger, salt and pepper to form a thick paste. Then, add 2 to 3 tablespoons of water and continue to blend until it’s a perfect consistency for drizzling.  If you’d like it a bit thinner, add more water – just be sure to add the water 1 tablespoon at a time (and test desired consistency), so you don’t make it too thin. Taste and season with extra salt and lemon juice to ensure it’s exactly where your taste buds want it to be😉). Store leftovers in the fridge; it’ll thicken up as it sits, so stir in a tablespoon of extra water to thin it out before enjoying.

2-INGREDIENT CHOCOLATE FUDGE CAKES 😍 #NoOvenNeeded

Here’s how to make ‘em⤵️
• 2 ¼ cups chocolate chips, melted
• 1 cup canned pumpkin puree

Prepare a standard muffin tin: add paper liners to 10 compartments (of the 12). I like to double up on the paper liners for extra sturdiness. No need to mist with oil spray. Set aside.

Melt the chocolate chips using a double boiler or using the microwave method (see my full recipe page for instructions). Mix in the pumpkin puree and stir until the mixture is smooth and creamy without any streaks of pumpkin. Divide the batter among the 10 paper liners, smooth the tops using the back of a spoon and give the muffin tin a few taps on the counter to flatten out the cakes. Place in fridge to firm for 2 hours or longer. Serve with optional whipped topping, berries and dark chocolate shavings.

It’s a dish featuring layers upon layers of flavorful vegetables and herbs with creamy hard-boiled eggs and tangy feta cheese. I love drizzling on my lemony vinaigrette for brightness and zing☀️🍋, but really ANY dressing works! You’re the boss of your sauce 😉
 
Thanks to the yummy hard-boiled eggs🥚, it’s a meal that has high-quality protein and other key nutrients that are an important part of a heart healthy diet.

For the salad 
• 8 hard-boiled eggs
• ½ English cucumber, chopped
• 1 pint cherry tomatoes, halved
• 1 can quartered artichoke hearts
• ½ to 1 small red onion

• ½ cup fresh dill
• 2 avocados, cubed
• Crumbled feta cheese, optional
 
For lemon vinaigrette (makes 1 cup) 
• 6 Tbsp lemon juice

• 2 to 3 tsp lemon zest
• 2 tsp Dijon mustard

I’m bananas for these 🍌FROZEN BANANA BITES 💖

They’re simple to make and really hit the sweet spot!😍
 
Here’s how to make ‘em⤵️
• 1 medium banana, peeled and sliced into ¼-inch wheels (~15 pieces)
• 2 Tbsp berry-flavored Greek yogurt
• 1 Tbsp peanut butter, melted in microwave for ~30 seconds

Line a baking sheet or large plate with parchment paper and add banana slices. Spread yogurt on top of each slice. Then, using a spoon create zigzag drizzles of melty peanut butter over the yogurt. Stash in the freezer for at least 2 hours to freeze. Transfer to a freezer bag or container to free up space, and enjoy whenever you have a sweet craving!
