This recipe makes 4 Servings
Ingredients:
  • 1 cup watermelon cubes (approximately 1″ cubes)
  • ½ ounce feta cheese, cut into small cubes
  • ¼ cup mint leaves
  • 1-2 tablespoons aged balsamic vinegar
Preparation:

Use a toothpick to skewer one watermelon cube, a small piece of feta cheese, and a mint leaf.  Chill and drizzle with balsamic vinegar before serving.  Repeat to make as many appetizers as needed.
