This recipe makes 1 Serving
- 1/4 cup old fashioned oats, dry
- 1 Tbsp flour (any kind including whole wheat, all-purpose, and oat)
- 1 egg white
- 1 tsp 100% pure maple syrup
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
- 1/4 tsp ground cinnamon
- Optional: 1 Tbsp raisins, dried cranberries, dried cherries, or dark chocolate chips
- 1/4 banana, sliced
- 1 Tbsp natural peanut butter
- 1 tsp 100% pure maple syrup (for topping)
Mix oats, flour, egg white, vanilla extract, baking powder, cinnamon, 1 teaspoon maple syrup, and desired optional ingredients well in microwave-safe cereal-size bowl. Spread batter thinly across the bottom and slightly up around edges. Microwave for 45 seconds.
Once cooled slightly, slide onto a serving plate and spread peanut butter on top. Add sliced banana and drizzle remaining maple syrup. Enjoy!
