Recipe Speedy Oatmeal Bread with Peanut Butter and Bananas

This satisfying breakfast cooks up in just 45 seconds and is easy to take on the go. What more could you ask for? Give it a try!

This recipe makes 1 Serving
Ingredients:
  • 1/4 cup old fashioned oats, dry
  • 1 Tbsp flour (any kind including whole wheat, all-purpose, and oat)
  • 1 egg white
  • 1 tsp 100% pure maple syrup
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp ground cinnamon
  • Optional: 1 Tbsp raisins, dried cranberries, dried cherries, or dark chocolate chips
  • 1/4 banana, sliced
  • 1 Tbsp natural peanut butter
  • 1 tsp 100% pure maple syrup (for topping)
Preparation:

Mix oats, flour, egg white, vanilla extract, baking powder, cinnamon, 1 teaspoon maple syrup, and desired optional ingredients well in microwave-safe cereal-size bowl. Spread batter thinly across the bottom and slightly up around edges. Microwave for 45 seconds.

Once cooled slightly, slide onto a serving plate and spread peanut butter on top. Add sliced banana and drizzle remaining maple syrup. Enjoy!
