RECIPE NOTES
• Your pineapple spears have to be frozen solid for this trick to work. If it’s too cold to hold as you create your shavings, wrap a paper towel around the part you’re holding.
• I find that using a microplane is best; a box grater may not create the same fluffy, shaved effect.
• The shavings will melt pretty fast so make this right before serving!
