Imagine sweet, chewy caramel-like dates stuffed with creamy peanut butter and crunchy, salted peanuts, all smothered in decadent chocolate. Is your mouth watering yet?!? The flavors blend perfectly, creating a festive treat that will hit the spot. 

Worried about peanut allergies? No problem! Simply swap in safe alternatives like almond butter and almonds or cashew butter and cashews. You can even use sunflower or soy nut butter and skip the nuts completely.

You can also get creative by adding crushed candy canes for a festive touch during the winter holidays or shredded coconut for a snowy look.

Chocolate Peanut Butter Dates

It’s a holi-date with these no-bake copycat Snickers bars.
Servings: 14 pieces
Prep Time: 10 minutes
Total Time: 30 minutes

Ingredients
 

  • 14 to 16 Medjool dates, pitted
  • 8 teaspoons creamy peanut butter
  • 32 whole roasted salted peanuts
  • ½ cup semi-sweet chocolate chips
  • ¼ cup finely chopped roasted salted peanuts

Instructions
 

  • Line a baking sheet or tray with parchment paper.
  • Open each date and fill the inside with about ½ teaspoon of peanut butter and 2 whole peanuts (or several half pieces). Pinch the dates closed (it’s okay if they remain partially open) and place on parchment-lined sheet.
  • Melt the Chocolate: Place chocolate chips in a microwave-safe small bowl or mug. Melt the chips in the microwave in 20-second intervals, stirring each time, until smooth and creamy. Be careful not to burn the chocolate. Alternatively, you can use a double boiler to melt the chocolate.
  • Generously drizzle the melted chocolate over each stuffed date using a spoon. You can either leave the chocolate in a drizzled format or spread it over the top half of the dates using the back of a spoon, your finger, or by dipping the top portion of the dates directly into the chocolate.
  • Sprinkle crushed peanuts over the chocolate coating. Place the dates in the fridge for at least 20 minutes to allow the chocolate to firm up.

Notes

• You can choose another nut combo like almonds/almond butter or cashews/cashew butter.
• Dates will keep in fridge for up to 2 weeks. Alternatively, you can store leftovers in freezer, but it’s important to let your dates defrost on the counter before eating— the dates become super-hard when frozen and can hurt your teeth when you bite into them.
• A serving is 1 date; if using smaller dates, cut nutrition numbers in half.
• If you’re following a gluten-free diet, be sure to carefully read the packaging for each ingredient. While these foods are inherently gluten-free, gluten can sometimes be added during processing for a variety of reasons, including for flavor and consistency.
• If you’re following a dairy-free diet, ensure the chocolate you’re using is dairy-free.
