Satisfy your sweet tooth with this treat, which is completely free of added sugars. The only sugar is the naturally occuring kind from sweet potatoes. Bet you couldn’t tell my version apart from regular chocolate pudding!

This recipe makes 5 Servings
  • 2 medium sweet potatoes
  • 2 ripe avocados
  • 2 tablespoons unsweetened cocoa powder
  • Pinch salt
  • 1 teaspoon vanilla extract
  • ¼ cup low-fat milk

Bake or microwave sweet potatoes. Let cool.

Scoop out the inside of sweet potatoes (discard the skin) and place in a food processor along with peeled avocados (discard the skin), cocoa powder and salt. Begin to blend.

While food processor is blending, slowly drizzle in vanilla extract. Blend well for several minutes to create a smooth, pudding-like consistency, adding the milk while blending to smooth it out. You may need to scrape the sides throughout the blending process to ensure everything is mixed together.

Makes about 2½ cups; ½ cup per serving
