I came up with a healthy hack for the beloved bite using mushrooms, and you seriously have to try it. It provides an addictive umami flavor and chew. The best part: It contains anti-viral properties to help the body fend off bugs. These chewy gems work great stirred into soups, sprinkled onto a salad or even added to omelets and other dishes. I’m all about ‘shrooms 😉

Mushroom Bacon

Ingredients
 

  • ounces shiitake mushrooms, stems removed and thinly sliced (about 2½ cups)
  • ¼ teaspoon kosher salt

Instructions
 

  • Preheat oven to 400˚.
  • Place mushrooms on a baking sheet in a single layer and liberally mist with olive oil spray. Sprinkle salt over top and roast for about 20 minutes, tossing halfway through, until the mushrooms shrink significantly and are golden brown.
