Purple Super Slaw
Ingredients
- 4 cups shredded purple/red cabbage
- 2 cups shredded carrots
- ¼ cup chopped red onion
- 1 cup sliced, into rounds purple grapes
- ¼ cup low-fat mayonnaise
- 1 tablespoon apple cider vinegar or orange juice
- 1 teaspoon Dijon mustard
- ½ teaspoon kosher salt or coarse sea salt
- Ground black pepper, to taste
Instructions
- In a large bowl, combine all the ingredients and serve.
I like the slaw with the cranberries.
I make a cole slaw without mayonnaise because a lot of friends and family do not like mayonnaise
Cole Slaw – Marsha’s Recipe
Ingredients
1. 1 cup sugar
2. 1 cup oil – I use canola oil
3. 1/2 cup vinegar
4. 1 head cabbage (use 1 head of green cabbage and ½ head red cabbage)
5. 2 Red, yellow or orange peppers (you can mix colors)
6. Carrots shredded (I buy it already shredded – matchstix carrots)
7. Kosher salt to be rubbed on cabbage (about the size of a quarter)
Directions
1. Shred cabbage.
2. Rub cabbage with kosher salt.
3. Mix dressing ingredients well and pour over finely shredded cabbage.
4. Allow to sit for several hours in the fridge before serving.
you can 1/2 the ingredients if you want to make less

I enjoyed this, very crunchy, light, and fresh. The portion size is large as well. I didn’t have grapes so I substituted apples. I found the onion a little too strong for my personal taste so next time, I’ll cut the amount in half. Very good, thank you.
