Roasted Mushrooms

Make room for ‘shrooms! This stellar side features a mix of mushrooms, roasted to perfection.

Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients
 

  • 1 pound mixed mushrooms, such as maitake, king trumpet, and shiitake mushrooms, roughly chopped into quarters or halves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions
 

  • Heat oven to 450˚.
  • Add mushrooms to a large bowl and toss with oil.
  • In a small bowl, mix the salt, garlic and pepper. Add the seasonings to the bowl with mushrooms and toss to evenly coat. Lay the mushrooms out on a baking sheet and mist the tops with extra oil spray.
  • Roast mushrooms in the oven for about 20 minutes, stirring halfway through. Note: They will generate a lot of water at the 10-minute mark, but that’ll be absorbed when they’re done roasting.
  • If you’d like them more well done, cook for an extra 5 minutes. Season with salt and pepper to taste, and garnish with optional minced herbs.
