Make room for ‘shrooms! This stellar side features a mix of mushrooms, roasted to perfection. It’s the perfect complement to poultry, fish, or vegetarian dishes. And it’s a snap to make.

This recipe makes 4 servings
Ingredients:
  • 1 pound mixed mushrooms (such as maitake, king trumpet, and shiitake mushrooms), roughly chopped into quarters or halves
  • 1 teaspoon salt
  • 1 tablespoon grapeseed, canola or olive oil
  • ¼ cup finely chopped cilantro, optional

 

 

 

 

 

Preparation:

Heat oven to 375˚.

Mix mushrooms in a large bowl with oil and salt. Make sure mushrooms are fully coated with the oil and salt. Lay the mushrooms out on a baking sheet and mist the tops with extra oil spray.

Roast mushrooms in the oven for about 15 minutes or until they’re a bit brown on the edges. Toss with optional cilantro.
