Potato Slinkies

How cool do these potatoes look?! My kids flipped over them and Jesse gets credit for their appropriate name.

Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

Ingredients
 

  • Olive oil spray
  • 4 medium potatoes, skin on (scrubbed clean)
  • Kosher salt, to taste
  • Ground black pepper, to taste

Instructions
 

  • Cut the potatoes as if you were going to make thin rounds, but stop cutting once you are about ½-3/4 inch from the bottom. This way, the potato “slices” are fanned out but still attached.
  • Place the spuds on a baking sheet and spray liberally with oil spray. Add salt and black pepper to taste, plus seasoning of choice (optional) and spread over potatoes (make sure you get in the grooves!).
  • Place into a 375 degree oven for 50 minutes to 1 hour until well cooked.

Notes

Seasoning Blends (optional)
Italian-style seasoning: 1 ½ tablespoon of grated parmesan cheese and 1 teaspoon of Italian seasoning
Snazzy Curry: 1 teaspoon curry powder
Garlic n’ Onion: ½ teaspoon garlic powder, ½ teaspoon onion powder
Big Easy Style: 1 teaspoon Cajun seasoning
