It’s easy to whip up and fun to gobble down (let’s be honest, everything is more delicious in an edible veggie boat). And did I mention you can enjoy an entire boat for 12 grams of protein, 4 grams of filling fiber, and only 180 calories? Grab your appetite and get on board!

This recipe makes 2 cucumber boats
Ingredients:
  • 2 large cucumbers, divided (1 to make cucumber boats, and 1 for the salad filling)
  • ½ cup chopped tomatoes
  • 3 scallions, sliced
  • ½ cup crumbled blue cheese
  • 2 to 3 tablespoons Buffalo Ranch Dressing
Preparation:

To make cucumber boats: Cut 1 cucumber in half lengthwise. Using a spoon, scoop out the seeds/insides of each half (and discard the insides). Set the 2 cucumber boats aside.

To make Buffalo Cucumber filling: Peel the outer skin off remaining cucumber and discard. Cut the cucumber into small cube-like pieces, resembling dice (about 2 cups worth…make sure the cubes are not too thin, so they stand up to the sauce and don’t become mushy). In a medium bowl, mix cubed cucumbers, crumbled blue cheese, chopped tomatoes, scallions, and 2 to 3 tablespoons of Buffalo Ranch Dressing

Stuff cucumber boats with cucumber salad and garnish with extra scallions and chopped parsley.
