Buffalo Cucumber Boats

One eye-grabbing boat offers 12 grams of protein and 4 grams of filling fiber for just 180 calories. Pack your appetite and get on board!

Ingredients
 

  • 2 large cucumbers
  • ½ cup crumbled blue cheese
  • 3 scallions, sliced, plus more for garnish
  • Chopped fresh parsley for garnish
  • 2 to 3 tablespoons Buffalo Ranch Dressing

Buffalo Ranch Dressing

  • ½ cup plain Greek yogurt, low-fat or nonfat
  • 2 tablespoons low-fat mayonnaise
  • 1 tablespoon milk of choice
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon kosher salt
  • ¾ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 tablespoon finely chopped fresh chives
  • 1 tablespoon finely chopped fresh parsley
  • ½ teaspoon finely chopped fresh dill, or ¼ teaspoon dried dill
  • 3 to 4 tablespoons hot sauce, or more to taste

Instructions
 

For the Buffalo Ranch Dressing:

  • In a medium bowl, mix all dressing ingredients. Set aside.

For the Cucumber Boats:

  • Cut 1 cucumber in half or in thirds lengthwise. Using a spoon, scoop out the seeds and insides and discard them.

For the Buffalo-Cucumber Filling:

  • Peel the second cucumber and cut it into ¼-inch cubes. You’ll have 2 cups. In a medium bowl, mix the cubed cucumbers, blue cheese, scallions, and 2 to 3 tablespoons of the Buffalo Ranch Dressing. (Save leftover dressing in an airtight container for up to 1 week.)
  • Stuff the cucumber boats with the cucumber salad and garnish with extra scallions and parsley.

Notes

Add 5 calories for each extra tablespoon of dressing.
