Meaty, cheesy and spicy, these nachos are insanely good, and ideal for get-togethers (you can easily double or triple the recipe for large crowds). They’re simple to prepare, and you can even cook and serve ’em on a sheet pan or skillet, making cleanup a breeze. Each tasty bite is filled with layers of crispy tortilla chips, fiery shredded chicken, and melty Tex-Mex cheese. Then, to ensure your “bring-on-the-heat” taste buds are appropriately satisfied, it’s topped with a two-ingredient Buffalo drizzle. Um, need I say more?

This recipe makes 6 to 8 servings
Ingredients:
  • ½ cup plus 1 tablespoon Buffalo Wing sauce, divided 
  • 3 cups shredded cooked chicken (packed)
  • 12 ounces whole grain tortilla chips
  • 1⅓ cups shredded 2% reduced-fat Mexican blend cheese
  • ½ cup low-fat or nonfat Greek yogurt
  • 2 scallions, thinly sliced

Preparation:

For the Nachos

Preheat oven to 400˚.

In a medium bowl, mix 6 tablespoons of Buffalo wing sauce with the shredded chicken until well coated. Set aside.

Place (4 ounces) of the tortilla chips in an even layer on a lined baking sheet or oven-safe pan.  Sprinkle ⅓ cup of shredded cheese and ⅓ of the Buffalo chicken mixture evenly over the chips. Repeat the layering process 2 more times (chips, cheese, chicken) for a total of 3 layers.  

Sprinkle the remaining ⅓ cup shredded cheese over the top layer of Buffalo chicken. Bake for 8 to 10 minutes until the cheese is melted and corners of chips start to turn golden brown.

For the Buffalo Drizzle

In a small bowl, combine Greek yogurt and the remaining 3 tablespoons buffalo sauce. When the nachos come out of the oven, drizzle the sauce over the warm nachos and garnish with scallions. Serve immediately.
