Bonus: it’s easy to scale up or down depending on how many you need to make—for example, you can use 1 tablespoon each of cream cheese and chopped strawberries for a mini portion of just 4 stuffed dates. The crushed graham cracker is optional…but is it really?! And I highly recommend this simple strawberry glaze to intensify the fruity deliciousness. This recipe makes 9-18 dates
Ingredients:

• ¼ cup chopped strawberries
• ¼ cup light cream cheese
• 9-18 pitted Medjool dates
• Crushed graham cracker, optional

 

Preparation:

Mash cream cheese and strawberries together and add 1-2 teaspoons into each pitted Medjool date. Sprinkle some optional crushed graham crackers on top and place in fridge to chill.

Nutrition provided per date with 1 teaspoon of filling. If you stuff ’em with two teaspoons each, it will be 80 calories per date.
