Bonus: it’s easy to scale up or down depending on how many you need to make—for example, you can use 1 tablespoon each of cream cheese and chopped strawberries for a mini portion of just 4 stuffed dates. The crushed graham cracker is optional…but is it really?! And I highly recommend this simple strawberry glaze to intensify the fruity deliciousness. Move over glazed donuts, glazed dates are where it’s at.

Strawberry Cheesecake Dates

My Strawberry Cheesecake Dates have all the characteristics you’ve been looking for: sweet, low-maintenance, and unforgettable. 
Servings: 12 stuffed dates
Prep Time: 5 minutes
Total Time: 10 minutes

Ingredients
 

  • ¼ cup chopped strawberries
  • ¼ cup light cream cheese
  • 12 Medjool dates, pitted
  • Crushed graham cracker, optional

Instructions
 

  • Mash cream cheese and strawberries together and add a heaping teaspoon into each pitted Medjool date. Sprinkle some optional crushed graham crackers on top and place in fridge to chill.
