This spicy bean mix is perfect for adding to tacos, tucking into a quesadilla, wrapping in a burrito, or scooping on top of a salad. I like to keep a batch in the fridge so it can be used for quick weekday meals. Try it tonight!

This recipe makes 4 cups
Ingredients:
  • • 1 can (16 ounces) black beans, drained and rinsed*
  • • 1 can (16 ounces) pinto beans, drained and rinsed*
  • • 1 jar (16 ounces) salsa (mild, medium or hot)
  • • 1 teaspoon garlic powder
  • • 1 teaspoon ground cumin
  • • 2 teaspoons Dijon mustard
Preparation:

Mix ingredients thoroughly and sauté over medium heat until bubbly and hot, about 5 to 10 minutes.

Note: You can swap in any variety of bean you like.

*Rinse in a colander under cold running water to remove as much salt as possible. Alternatively, you can also look for low-sodium brands.

Makes 8 servings, ½-cup each
