Love stuffing…but not feeling stuffed? Try this lightened-up version, which uses fiber-filled oats instead of refined white bread. It requires minimal effort and delivers big on flavor.

This recipe makes 6 servings
Ingredients:

For the Stuffing

    • • 2 teaspoons olive oil
    • • 1 cup chopped sweet onion
    • • 1 cup chopped celery
    • • 2 cups old fashioned rolled oats
    • • ¾ cup reduced-sodium chicken broth
    • • ½ cup water
    • • 1 tablespoon dried sage
    • • 1 teaspoon Italian seasoning

For the Gravy

  • • 1 cup reduced-sodium chicken broth
  • • 1 tablespoon oat flour*
  • • ¼ teaspoon pepper
  • • ¼ teaspoon salt

*You can buy oat flour or make it yourself by pulsing rolled oats in a food processor or processing in a high-speed blender.  

Preparation:

Coat the bottom of a medium pot with the olive oil and warm over medium heat. Add the onion and celery and cook for about 7 minutes until lightly browned and soft.

Add the oats, broth, water, sage and Italian seasoning to the pot and stir everything together. Cover with a lid and cook over low heat for about 45 minutes. The mixture will be dry. Stir on occasion to prevent the bottom from burning.

To make the gravy: Mist a small skillet with oil spray and warm over medium heat. Add the broth and flour and simmer until thick, whisking occasionally. Season with salt, pepper and other preferred seasonings to taste. Drizzle the gravy over the stuffing prior to serving.
