Peach Melba
Peaches, sweet and succulent, are about as close to perfection as you can get in the summer. And the drippy juice makes them seriously taste like candy.

Yet, grilling sliced peaches seems to magically magnify their awesomeness. That’s what I do in this fuss-free recipe. The black grill marks are like a flashing welcome sign, inviting you to dive into the flavorful combo of vanilla ice cream, tart raspberries and crunchy granola or crushed graham crackers. It’s a simple-to-assemble dessert worth saving room for.

Peach Melba
Ingredients
- 1 ripe peach
- ½ cup scoop of vanilla ice cream or vanilla yogurt
- A few fresh raspberries
- 1 to 2 Tablespoons granola, crumbled graham crackers, chopped nuts or seeds
Instructions
- Prepare outdoor grill or indoor grill pan with oil spray and preheat to medium-high. Slice peach in half and remove pit and lightly mist both flesh sides with oil spray. Place both halves cut-side down on grill and allow to cook ~5 minutes or until the peaches develop nice grill marks.
- Remove peaches from heat, and slice the halves into sections. Add a generous scoop of vanilla ice cream to the bottom of a glass ramekin or dish. Place the peach slices around the ice cream, then sprinkle on fresh raspberries and granola over the top.
