Going vegan but craving custard? You’re in for a treat! I replace the usual egg yolks and milk with chia seeds and banana for a decadent and creamy dessert you’ll really enjoy. Plus, it’s so easy to whip up!

- 1/2 cup unsweetened vanilla almond milk
- 2 teaspoons maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon unsweetened cocoa powder
- 2 tablespoons chia seeds
- 1/2 ripe banana
In a small pot, add unsweetened vanilla almond milk, maple syrup, vanilla extract, unsweetened cocoa powder, and chia seeds. Cook on medium heat, stirring frequently for about 5 minutes or until the seeds absorb the water and the mixture becomes gelatinous. Transfer to a container, mash and stir in banana, and chill in fridge for about 2 hours before serving.
