Grilled PB & Fruit
Looking to give your beloved PB&J sandwich a gourmet twist? This skillet version is a fun and easy way to elevate the classic version. By adding fresh fruit and toasting it on a skillet (or right in your toaster oven), you transform the sandwich into a warm, golden, and gooey masterpiece.

The layers of crispy bread, melty peanut butter, and naturally sweet fruit—like creamy banana, juicy grapes, or mixed berries—create a satisfying flavor explosion that’s both delicious and nutritious. You’re in for a truly delightful treat!
As a registered dietitian and certified foodie, I often get asked for advice on how to start cooking more at home. My top tip: always have a few simple meals you can whip up in 5-10 minutes with ingredients you typically have on hand. And yes, cereal totally counts—especially my souped-up cereal bowls like my PB & BRANana, Taste of the Tropics, or Just Peachy!

This Grilled PB & Fruit sandwich is a great addition to your go-to list. You probably already have everything in your pantry… and it’s easy, comforting, and packed with fresh fruit for a nutritional boost. If you’re a traditional PB&J fan (and enjoy the jelly part), skip the fruit and slather on my homemade Blueberry Chia Jam or 2-Ingredient Cherry Jam (with or without the addition of sliced fruit)— it’ll be yummy, and you’ll be surprised how easy it is to make a no-sugar jam!

And don’t think this elevated sammie is just for adults—it’s kid-approved in my house! It’s the perfect way to upgrade their lunchboxes with the flavors they love. You can easily swap in any nut butter and customize the fruit to suit their (or your) preferences. It’s a win-win for everyone!

Grilled PB & Fruit
Ingredients
- 2 tablespoons peanut butter
- 2 slices whole-grain bread
- Sliced fruit of choice, ½ banana, ~10 grapes, 5 strawberries, or 20 blueberries
Instructions
- Spread 1 tablespoon of peanut butter on each slice of bread. Top 1 slice with preferred fruit and place second slice of bread on top (peanut butter facing down). Liberally mist both sides of sandwich with oil spray.
- Warm a nonstick skillet over medium heat. Add the sandwich and cook each side for about 1 minute, until the bread is nicely browned on both sides (check with a spatula to make sure it’s not burning). Slice and enjoy!

Love these!!! I made them for myself and the kids last week for dinner! It was great because each kid got to choose the fruit they wanted. We made fruit stations and they even combined some of the fruit. Lots of fun and delicious – they enjoyed the combo and sweet fruit and creamy peanut butter. Thanks, Joy!
Hi Morgan. Thanks for your comments! It sounds like you found a fun way to get the kids involved and create a stress-free dinner experience for the whole crew!

Hi Joy, what is the healthiest cooking spray to use on the pb&j(fruit)?
Thank you!
Hi Cheryl! I use either an olive oil or avocado oil cooking spray. Bonus if you can find one in a non-aerosol canister!
I think you got this recipe from a smoothie place in the airport. I had this there a few years ago and loved it.
Hi! I never saw this at the airport—but I definitely need to know where you saw it at so I can keep my eyes out for it in my travels. This may just become new favorite airport!
Love it ! I just thought of using your pumpkin peanut butter as the base. Will try that next time.
Hi Sheryl. Thanks for your comments—and using pumpkin peanut butter is a great idea! If you decide to give it a shot, please come back and let us know what you think—we’d love to hear how it turned out.
