Trying to curb your carb intake? Try these flourless, lower-carb tortillas, which are made using only plantains, a little lime juice and some salt. They’re easy to make, totally delicious and only 50 calories a pop!

- 2 large green plantains, ends trimmed, skin on
- Juice of ½ lime (about 1 tablespoon)
- ½ teaspoon fine salt
Bring a large pot of water to a boil.
Chop each plantain (skin on) into 4 or 5 equal pieces, keeping skin intact.
Place the plantains in the boiling water and reduce to a simmer. Simmer for about 10 minutes, or until the insides of the plantains are very soft. Strain and let cool slightly.
Remove the skins of the plantains and place in a food processor with the lime juice and salt. Process the mixture until smooth.
Divide the dough into 8 equal pieces and roll into balls. (It may help to spray your hands first with cooking spray; the mixture will be very sticky.)
Spray the inside of a plastic baggie (like Ziploc) and insert one of the dough balls. Use a rolling pin or a tortilla press to flatten. Repeat with each dough ball.
Place one tortilla at a time on a skillet (coated with oil spray if needed to prevent sticking) on medium-low heat, cooking each side about 1 to 2 minutes.
