Lobster Roll

It wouldn’t be summer without a trip to the beach and a lobster roll in hand. This lightened up version delivers on creamy deliciousness and is a cinch to make.

Ingredients
 

  • 1 pound cooked lobster meat
  • ¼ cup light mayo
  • 1 medium celery stalk, finely chopped
  • 3 tablespoons lemon juice
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped chives
  • Optional tarragon
  • Salt and black pepper to taste
  • 8 whole grain hot dog buns, lightly toasted

Instructions
 

  • Mix mayo with chives, parsley and optional tarragon. Mix mayo mixture with celery, lemon juice, and lobster meat. Add additional salt and pepper to taste. Evenly distribute lobster salad among hot dog buns and garnish with chives and preferred spices.
