These broccoli breadcrumbs are the ultimate finishing touch to just about any recipe. Sprinkle them on baked macaroni and cheese, spread over roasted salmon, or toss them into steamed veggies for a flavorful crunch that’s hard to resist.

This recipe makes 1 cup
  • 1 cup fresh broccoli florets, finely minced
  • 2 to 4 tablespoons grated Parmesan cheese

Mince broccoli florets by hand using a sharp knife (discard large stems before chopping) or pulse florets in a food processor, for about 10 seconds (be careful not to over-pulse, or they’ll wind up pureed). Mix broccoli pieces with grated Parmesan. Sprinkle over the tops of your favorite dishes, like these healthy renditions of Mac and Cheese, and Penne alla Vodka!
