Zucchini Parmesan Crisps

Zucchini Parmesan Crisps
Introducing Zucchini Parmesan Crisps—a side dish so tasty, it makes eating your veggies a breeze.
Ingredients
- 2 medium zucchini
- 1½ cups grated Parmesan
- ¼ to ½ teaspoon garlic powder
- Freshly ground black pepper
Instructions
- Preheat oven to 400˚. Line a large baking sheet (or 2 smaller sheets) with parchment paper. Set aside.
- Slice zucchini (with skin on) into thin rounds.
- Generously sprinkle ¾ of Parmesan evenly over parchment paper. Place zucchini rounds on top of Parm in a single layer. Mist zucchini tops with oil spray (*IMPORTANT NOTE: Hold spray bottle high over baking sheet to avoid a Parmesan snowstorm).
- Sprinkle remaining Parm over misted zucchini tops. Sprinkle on garlic powder and freshly ground black pepper. Roast in oven for 20 to 25 minutes, until cheese is browned and bubbly.
- Remove from oven and allow to cool for a few minutes. Lift edges of crispy parm, break into pieces and enjoy!

Would it be possible to substitute cucumber slices for zucchini?
Hi Susan. Cucumbers have a higher water content and will likely yield a mushier consistency. Unfortunately, we cannot recommend this swap for this recipe. But definitely try this recipe when you zucchini in the house—and let us know what you think! You can also try it with carrots. Hoping you love them as much as we do!

I do love this recipe, and I have shared it with many of my friends. The first time I made it, it came out nice & crispy and I cut the sheet for individual portions. But, the last two times I tried to make it, its not coming out as a sheet, but a powdery mess. It tastes good, but not like the crispy sheet. I can’t figure out what I’m doing wrong. Can you help? Hi Ruth! So glad you love the recipe…and thank you for sharing it with friends! If it’s turning out crumbly, here are a few quick tips:
-Make sure you’re using enough grated Parmesan underneath the zucchini—it helps it bind and crisp.
-You may need a few extra minutes in the oven to get that golden crunch. Keep an eye on the oven and let the parm color turn really brown.
-Let it cool and set on the counter for about 5 minutes before breaking into pieces. This helps it to crisp up.

Great recipe! Can you refrigerate leftovers?
Hi Roby, so glad you enjoyed it! Yes, you can refrigerate leftovers, but just a heads-up: they’ll lose their crispiness. That said, they’re still super tasty cold or reheated. If you want to revive a little crunch, try popping them in the air fryer or toaster oven. One person told me they tucked the leftovers into a wrap the next day and loved it. Lots of tasty options!
