Slaw:
2 cups shredded green cabbage
1½ cups shredded red cabbage
½ cup matchstick carrots
½ cup sliced scallions (green onions)
1 large green apple, julienned (cut into matchsticks)
Sauce:
2 tablespoons plain nonfat Greek style yogurt
2 tablespoons light mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon poppyseeds
1 teaspoon lemon juice
1 teaspoon olive oil
¼ teaspoon sea salt
⅛ teaspoon fresh cracked black pepper
Combine fruit and veggies in a large bowl to make the slaw.
In a small bowl, combine the sauce ingredients. Pour over the fruit and veggie mixture. Stir well to combine. Serve cold.
