Apple Poppyseed Coleslaw

Ingredients
 

Slaw:

  • 2 cups shredded green cabbage
  • cups shredded red cabbage
  • ½ cup matchstick carrots
  • ½ cup sliced scallions, green onions
  • 1 large green apple, julienned (cut into matchsticks)

Sauce:

  • 2 tablespoons plain nonfat Greek style yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon poppyseeds
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • ¼ teaspoon sea salt
  • teaspoon fresh cracked black pepper

Instructions
 

  • Combine fruit and veggies in a large bowl to make the slaw.
  • In a small bowl, combine the sauce ingredients. Pour over the fruit and veggie mixture. Stir well to combine. Serve cold.
