Instead of slurping on packaged refined, white noodles sky-high in sodium (sorry Ramen!), I’m serving up a better-for-you version that’ll satisfy an urge. Ramen cravings be gone!

This recipe makes 2 servings
Ingredients:
  • 4 cups reduced sodium vegetable broth
  • 1 medium zucchini, spiralized into “noodles”
  • salt and pepper, to taste
Preparation:

Add broth to a medium pot, and bring to a gently boil. Reduce heat to low, then add spiralized zucchini noodles and let simmer, stirring occasionally, for about 10 minutes or until the zoodles reach your preferred consistency. Season with salt, pepper, and other preferred herbs to taste.
