Ramen Zoodles

I’m serving up a better-for-you version that’ll satisfy an urge. Ramen cravings be gone!
Servings: 2 servings
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients
 

  • 4 cups reduced-sodium vegetable broth
  • 1 medium zucchini, spiralized into “noodles”
  • Salt and pepper, to taste

Instructions
 

  • Add broth to a medium pot, and bring to a gently boil. Reduce heat to low, then add spiralized zucchini noodles and let simmer, stirring occasionally, for about 10 minutes or until the zoodles reach your preferred consistency.
  • Season with salt, pepper, and other preferred herbs to taste.
