Skewers aren’t just for the grill! I love using them at breakfast, alternating whole grain waffles with whatever fruit is in season…or in my fridge.

In this recipe, I make use of cinnamon-flavored apples to create the perfect fall dish. Feel free to swap in pears or peaches, or whatever fruit you’re in the mood for.

Apple-Cinnamon Waffle Kebabs

I make use of cinnamon-flavored apples to create the perfect fall dish. Feel free to swap in pears or peaches, or whatever fruit you’re in the mood for.

Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients
 

  • 1 medium apple, cut into ¼-inch slices or chunks
  • Ground cinnamon
  • 2 whole grain waffles
  • 2 skewers
  • 2 teaspoons maple syrup

Instructions
 

  • Spray a skillet with cooking spray and warm over medium-high heat. Add the apples to the skillet and sprinkle with a dash of ground cinnamon. Sauté the apples for 2 to 3 minutes per side.
  • While the apples are cooking, toast the waffles. Then cut each of them into 4 pieces.
  • Using 2 skewers, alternate waffle pieces with 1 to 2 apple slices. Drizzle with 1 teaspoon of maple syrup on each skewer before serving.

Notes

Note: Nutrition information includes maple syrup; subtract 40 calories and 4 grams of added sugar if you skip the syrup.
