Love macaroni and cheese? Here’s an easy way to add volume and nutrition to your next bowl of goodness: peel, slice, and roast a few sweet potatoes… then toss them in with the cheesy elbow noodles. The orange-hued spuds add a pretty pop of color along with creamy satisfaction and sweet indulgent flavor. They also infuse every delicious bite with fiber, potassium and beta-carotene.

P.S. If you have finicky eaters at home, disguise the roasted sweet potatoes by mashing them with a fork and then blending in with the cheese sauce before tossing with the noodles. Or you can simply add 1 cup canned sweet potato puree to the cheese sauce. Nobody will suspect a thing.

You can add sweet potatoes to any type of mac and cheese (homemade or store-bought). You’ll need at least 9 cups of creamy mac and cheese for this combo, but you can certainly scale down the sweet potatoes for a smaller batch.

This recipe makes 9 servings
Ingredients:
  • • 2 pounds sweet potatoes (about 4 medium), peeled and cut into small cubes.
  • • ¼ teaspoon kosher salt
  • • 9 cups prepared Mac & Cheese of choice, or try my lightened up recipe
Preparation:

Preheat oven to 400˚.

Coat a baking sheet with oil spray and add the sweet potato cubes in a single layer so they’re not overlapping. Liberally mist the tops of with oil spray and sprinkle with kosher salt. Place baking sheet in oven and roast for about 20 minutes, flipping halfway through to cook both sides evenly. The pieces should be gently firm and fork-tender.

Remove from oven and stir into a large pot filled with hot and creamy mac and cheese.
