Cowboy Caviar Bowl
Yeehaw we’re creating a Cowboy Caviar feast. Also known as Texas Caviar, this dish is the ultimate crowd-pleaser.

Cowboy Caviar Bowl
Yeehaw we’re creating a Cowboy Caviar feast. Also known as Texas Caviar, this dish is the ultimate crowd-pleaser.
Ingredients
- ½ cup canned black-eyed peas, rinsed and drained
- ½ cup canned black beans, rinsed and drained
- ½ cup sweet yellow corn
- ½ tomato, chopped
- 2 tablespoons red onion, finely diced
- 2 tablespoons red or orange bell pepper, finely diced
- 2 to 4 tablespoons fresh cilantro, minced
- Crumbled feta cheese or cubed chicken, optional
Dressing
- 1 tablespoon lime juice
- 2 teaspoons extra virgin olive oil
- ⅛ to ¼ teaspoon kosher salt
- Pinch ground cumin and chili powder, optional
Instructions
- Arrange everything (except dressing) in decorative piles in a one-serving bowl. Drizzle dressing ingredients over the top and mix to combine. Serve immediately or chill in fridge to let the flavors mingle together.
- For a scrumptious spin, add chopped chicken or feta cheese. You can also add diced avocado right before serving.

I made this a few years ago for a church function. But I eliminated the Black eyed peas and feta cheese. Everyone loved it however. I have been looking for the recipe again.

What is the dressing used for cowboy caviar
Hi Mimi. You’re making a quick dressing using lime juice, extra virgin olive oil and some seasonings (see ingredients/instructions above). It’s delicious! Feel free to adjust the seasonings based on your taste preferences. I hope you love it!
I make this almost weekly for my lunch at work and use it as a base. Sometimes I add a handful of dark leafy greens, sometimes shrimp, smoked salmon or tofu, or even some cooked cold rotini pasta. My dressing is about the same except I add a little honey or agave to keep it from being too tangy for my tastes. I also use garbanzo beans instead of black eyed peas, but will try them next time! It is delish and the office group is always drooling over it!
