You’re going to flip for this flavorful (and low-fuss) recipe! After the eggs are out of the oven, I like to top mine with a little Parmesan cheese and then dig into the deliciousness.

This recipe makes 2 servings
  • 2 Portobella mushroom caps
  • 2 eggs
  • Optional seasonings: fresh rosemary, garlic powder, onion powder
  • 2 teaspoons Parmesan cheese (optional)

Preheat oven to 350° F.

Season raw Portobella mushroom cap with optional seasonings. Carefully crack an egg on top of mushroom (you may need to scoop out a little bit of the gills to ensure that the egg stays on top of the mushroom). Place on baking sheet coated with oil spray and bake for about 20 minutes, or until the yolks have reached your desired doneness. Sprinkle on optional Parmesan cheese and enjoy!
