Fiesta Vegetable Omelet

Feel free to add in or substitute any other vegetables you have in the house, like tomatoes, spinach or zucchini.

Total Time: 17 minutes

Ingredients
 

  • ½ cup chopped onions*
  • ½ cup sliced mushrooms*
  • ½ cup chopped red bell pepper*
  • 1 egg
  • 3 egg whites
  • Optional seasonings: dash of salt, pepper, garlic powder, hot sauce, salsa

Instructions
 

  • Liberally coat a small skillet with oil spray and preheat the pan over medium heat. Sauté the onions, bell peppers and any other vegetables until soft, 5 to 7 minutes.
  • In a small bowl beat the whole egg with the egg whites and add optional seasonings (salt, pepper, garlic powder). Add the eggs to the skillet.
  • When the bottom of the omelet is cooked, gently flip and cook the other side. Fold one side over the other.
  • Top the omelet with the optional salsa or hot sauce and serve.

*Note: May substitute or add any extra non-starchy vegetables.
