Piña Colada Smoothie

I call this my 4-ingredient vacation…. because a frozen coconutty-pineapple beverage instantly transports me to the beach!
Servings: 1 smoothie
Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients
 

  • 1 cup frozen pineapple chunks
  • ½ cup lite coconut milk, mix well after opening can
  • 1 tablespoon shredded coconut
  • 1 drop coconut extract
  • 3 to 5 ice cubes

Instructions
 

  • Combine all ingredients in a blender until smooth and frothy. Add a drop more milk if needed.

To Make Ice Pops:

  • Pour smoothie into standard ice pop molds and freeze for at least 6 hours, or overnight.
