I call this my 4-ingredient vacation…. because a frozen coconutty-pineapple beverage instantly transports me to the beach!  It’s tastes clean and refreshing, yet rich and indulgent, and is comprised of wholesome ingredients you can feel good about slurping. Lickable lesson: On scorching-hot summer days, pour your smoothie into ice pop molds and freeze for a fun tropical treat.

This recipe makes 1 smoothie
Ingredients:
  • 1 cup frozen pineapple chunks
  • 1/2 cup lite coconut milk (mix well after opening can)
  • 1 tablespoon shredded coconut
  • 1 drop coconut extract 
  • 3 to 5 ice cubes
Preparation:

Combine all ingredients in a blender until smooth and frothy. Add a drop more milk if needed.

Ice Pops: To make ice pops, pour smoothie into standard ice pop molds and freeze for at least 6 hours, or overnight.
