Chipotle Pulled Chicken Wrap
Decked out lunch! I’m all wrapped up in this scrumptious sammie— it’s smoky, saucy and irresistibly GOOD.

Remember, you’re the boss of your wrap: you can choose to kick up the heat by adding extra chipotle peppers, or mix in a few tablespoons of mayo for a creamier chicken salad-like consistency. Also, it’s an easy recipe to scale up or down depending upon whether you’re dining alone or feeding a larger crowd. That’s a wrap, folks.

Chipotle Pulled Chicken Wrap
Ingredients
- 1 ½ cups shredded chicken*
- ½ cup salsa, mild, medium or spicy
- 2 chipotle peppers in adobo sauce, chopped up
- 1 teaspoon of adobo sauce
- 1 avocados, split and pits removed
- 4 whole-grain wrap, choose one for 100 calories or less
Instructions
- In a large bowl, make the filling by combining the chicken, salsa and chipotle peppers and adobo sauce. Spread about 1/4 avocado on the wrap, then spoon the filling down the center of each wrap.
- Drizzle on extra adobo sauce, if preferred. Roll up and enjoy!
