It’s my go-to solution for afternoon cravings, quick solo dinners, or when friends drop by and I need something fun to serve fast.

The tortilla turns perfectly golden under the broiler or in the toaster oven, the cheese melts into gooey bliss, and you can top it however you like—veggies (pictured above!), BBQ chicken, or even pineapple (yes, we’re sometimes a pineapple-on-pizza family!). It’s quick, delish, and always hits the spot.

Quick and Easy Cheesy Tortilla Pizza

Ingredients
 

  • 1 whole-grain tortilla
  • 2 tbsps marinara sauce
  • ¼ to ½ cup shredded part-skim mozzarella cheese
  • Red pepper flakes and dried oregano, optional
  • 1 to 2 teaspoons minced fresh basil, for garnish

Instructions
 

  • Set the oven to broil. Place the tortilla on a baking sheet and put it in the oven on the middle rack (it can burn too easily on the top rack).
  • Cook for 3 to 5 minutes total, flipping after each minute. (Note: Ovens and tortilla ingredients will vary, so watch carefully so the tortilla doesn’t burn. If air pockets form and your tortilla bubbles, press down with a wide spatula to flatten or pop a small hole in the tortilla with a sharp knife to deflate)
  • Remove the tortilla from the oven and spread the sauce on top, covering the majority of the tortilla except for a border of about ¼ inch all the way around. Sprinkle on the mozzarella cheese, season with red pepper flakes and oregano, if desired, and place back in the oven for about 30 seconds, until the cheese is melted.
  • Garnish with fresh basil and let it cool slightly to allow it to crunch up more. Cut into slices and enjoy.

Notes

Gluten-free version: To make this recipe gluten-free, use a gluten-free corn tortilla. Corn tortillas cook faster and tend to be dryer, so you can skip broiling entirely. Bake the tortilla on a sheet pan at 425°F (middle rack) for 4–6 minutes, flipping once halfway, until lightly crisp. Add the cheese, then bake 2–3 minutes more until the cheese melts.
