Quick and Easy Cheesy Tortilla Pizza
We’ve all been there—that pizza emergency when the craving hits hard and you need something cheesy and satisfying right this second. Instead of dialing up delivery, grab a tortilla and make this speedy, crispy, thin-crust pizza in minutes. It’s my go-to solution for afternoon cravings, quick solo dinners, or when friends drop by and I need something fun to serve fast.

The tortilla turns perfectly golden under the broiler or in the toaster oven, the cheese melts into gooey bliss, and you can top it however you like—veggies (pictured above!), BBQ chicken, or even pineapple (yes, we’re sometimes a pineapple-on-pizza family!). It’s quick, delish, and always hits the spot.
And if you’re a fellow pizza lover, there are sooo many out-of-the-box ways to enjoy all those classic flavors—think pizza mug omelet, spaghetti squash pizza, pizza casserole, or even a cabbage-crust version. But if you’re craving something closer to the real deal, try my Cheesy Pizza for One (made with a protein-rich dough) or my Sheet Pan Veggie Pizza—both are total crowd-pleasers.

Winner, winner… pizza for dinner!
- Pizza in a pinch: The fastest way to satisfy that “must have pizza now!” feeling.
- Cracker-thin crust: The tortilla crisps to perfection right under the broiler or in the toaster oven.
- Minimal effort, max reward: Only a few ingredients and barely any cleanup.
- Totally customizable: Make it your own with any toppings you’ve got on hand.
- Family favorite: Everyone gets their own personal pizza masterpiece… in a flash!

You can even amp up the fun by making it a pizza party: Let each member of the family pick their own toppings, anything goes from veggies to pineapple to saucy barbecue chicken. It’s a real piz-za heaven!
Yummy spin: Skip the marinara and top with pesto instead—it adds a fresh, herby twist that pairs beautifully with melty mozzarella!

Quick and Easy Cheesy Tortilla Pizza
Ingredients
- 1 whole-grain tortilla
- 2 tbsps marinara sauce
- ¼ to ½ cup shredded part-skim mozzarella cheese
- Red pepper flakes and dried oregano, optional
- 1 to 2 teaspoons minced fresh basil, for garnish
Instructions
- Set the oven to broil. Place the tortilla on a baking sheet and put it in the oven on the middle rack (it can burn too easily on the top rack).
- Cook for 3 to 5 minutes total, flipping after each minute. (Note: Ovens and tortilla ingredients will vary, so watch carefully so the tortilla doesn’t burn. If air pockets form and your tortilla bubbles, press down with a wide spatula to flatten or pop a small hole in the tortilla with a sharp knife to deflate)
- Remove the tortilla from the oven and spread the sauce on top, covering the majority of the tortilla except for a border of about ¼ inch all the way around. Sprinkle on the mozzarella cheese, season with red pepper flakes and oregano, if desired, and place back in the oven for about 30 seconds, until the cheese is melted.
- Garnish with fresh basil and let it cool slightly to allow it to crunch up more. Cut into slices and enjoy.
