Gold Medal Smoothie Bowl

Go for gold with this yummy creation. It provides protein, high-quality carbs, and heart-healthy fats in one delicious bowl of goodness.

Ingredients
 

  • 1 ripe banana or 1 heaping cup frozen mango chunks
  • 1 to 2 heaping cups frozen strawberries
  • ½ to 1 cup milk, of choice
  • 1 tablespoon creamy nut butter, peanut or almond
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey, optional

Instructions
 

  • Place everything in a blender and puree until thick and frothy. Pour into a cereal bowl, give it a good mix and stash in fridge for at least an hour to allow the chia seeds to thicken its consistency.
  • Decorate with a round slice of fruit (for the gold medal) and fresh chopped strawberries, shredded coconut and wild blueberries for the ribbon.

Notes

*You can choose to save the peanut butter for your gold medal décor. Simply soften in the microwave for ~ 45 seconds and squiggle it over the round slice of fruit.
