Growing up, Almond Joy was my candy bar, not just because of its name (although it was always fun to see “Joy” on the wrapper), but because it provided the perfect combination of sweet, crunch, and chocolatey goodness. In honor of this special treat, I created an almost too-good-for-breakfast bowl infused with all the nostalgia of the bar, along with wholesome, energizing, and healthy ingredients with a whopping 9 g of protein and 11 g of fiber. Trust me, this is pure JOY.

This recipe makes 1 serving
Ingredients:

Smoothie bowl
• ½ cup almond milk (or milk of choice)
• 1 large frozen banana
• 2 tablespoons cocoa powder
• ½ teaspoon vanilla extract
• ½ cup (~5) ice cubes

Toppings
• 2-3 teaspoons melty almond butter
• 1 tablespoon chopped almonds
• 1 tablespoon shredded coconut
• 1 tablespoon semi-sweet or dark chocolate chips
• Pinch coarse kosher salt or sea salt, optional

Preparation:

Process all smoothie bowl ingredients in a blender until just thick and creamy (don’t blend too long or it’ll become too thin). If it’s too thick to blend, add a small splash of milk.

Pour smoothie mixture into a bowl, drizzle on melty almond butter, and sprinkle on chopped almonds, shredded coconut, chocolate chips and kosher salt if using. Enjoy immediately!
