2-Ingredient Chocolate Crunch Bars

Here’s how was this sweet treat born:
When my son Cole was little, he looooved those blue-wrapped Crunch bars given out at Halloween and sold at our school’s football games. So, one day we decided to make our own—and we never looked back. He lives many miles away in Austin now, but he always sends me pictures when he makes them with his fiancé and I always gush!
If you love these Crunch Bars, you’re in good company—I’ve got a whole lineup of easy, chocolatey treats you can whip up in minutes. 2-Ingredient Chocolate Crunch Bars
Ingredients
- 2 cups semisweet or dark chocolate chips*
- 2 cups crispy brown rice cereal**, not “puffed” rice cereal***
Instructions
- Line a baking sheet with parchment paper and set aside.
- Melt the chocolate chips in a double boiler or saucepan on the stovetop over low heat. Alternatively, you can melt the chocolate in the microwave by heating for about 30 seconds at a time, stirring in between, until the chocolate is smooth and velvety.
- Add the crispy rice cereal into the melted chocolate and mix thoroughly.
- Spread the mixture on the prepared baking sheet (it doesn't have to be perfectly shaped, and will likely not reach the outer edges) and place it in the fridge for at least 30 minutes. Once it’s cool, cut into bars or break it into irregular pieces and place them on a festive serving tray.

Totally enjoyed almost too much. I broke it into irregular pieces. Will be making this again. I was not able to find brown rice cereal at 2 neighborhood stores. I will have to order some on-line. Is there a brand you recommend?

Broken-up brown rice cakes can work in a pinch, but the texture will be a little lighter and less crisp than crispy rice cereal. And I wouldn’t recommend cooked brown rice here. Even cooled, it’s too soft and moist, so you’d lose that crunchy texture. So for the best crispy crunch, the crispy rice cereal is definitely the winner! xx

Hi! Broken-up rice cakes can work in a pinch, but the texture will be lighter and less crisp than crispy rice cereal…. so I suggest sticking with a rice krispie type cereal for the best crunch. Hoping you love them!
