Cauliflower Mashed “Potatoes”

Mashed potatoes fall squarely into the comfort food category. And who doesn’t love hot, creamy comfort food?

Ingredients
 

  • 1 head cauliflower, cut into florets
  • ¾ cup reduced-sodium chicken or vegetable broth
  • 1 tablespoon cornstarch
  • 4 ounces lite cream cheese, 8 tablespoons
  • 2 tablespoons grated Parmesan or Romano cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon paprika
  • Kosher salt, to taste
  • Ground black pepper, to taste

Instructions
 

  • Steam cauliflower over boiling water until fork-tender, about 15 to 20 minutes (or cook in a microwave with 2 tablespoons water for 8 to 10 minutes until very soft). Drain off any liquid.
  • Place cauliflower in a food processor or blender along with ½ cup broth. Puree on high until smooth. Transfer puree to a medium saucepan.
  • In a cup, dissolve cornstarch in remaining ¼ cup broth, and add this mixture to cauliflower puree.
  • Add cream cheese, Parmesan, garlic powder, onion powder, and paprika. Cook over medium heat, continually stirring, until puree begins to thicken, 2 to 3 minutes.
  • Season with salt and pepper. Serve immediately.
