S’mores bring back so many great memories of sitting around a campfire telling scary stories while roasting marshmallows.

Sandwich one between two graham crackers and top with a layer of melty chocolate, and you’ve got yourself a warm, gooey treat that’s easy to devour. But, if you’re looking for a lighter and more innovative spin, make these fun pops for the whole gang!

S’mores Pops

Looking for a lighter and more innovative spin, make these fun pops for the whole gang!
Servings: 20 pops

Ingredients
 

  • 5 large graham cracker sheets, crushed into a powder
  • 1 cup semi-sweet chocolate chips
  • 20 lollipop sticks
  • 20 large marshmallows, about 1 large bag

Instructions
 

  • Place crushed graham crackers in a bowl.
  • Melt the chocolate chips in the microwave by heating for 15 to 30 seconds at a time, stirring in between, until chocolate is smooth and velvety. Or melt the chocolate on the stovetop in a double boiler or saucepan over low heat.
  • Dip the top part of the lollipop stick in melted chocolate, then pierce marshmallows with lollipop sticks, twisting until they are securely in the middle of the marshmallow.

To prepare s’mores pops:

  • Carefully dip the tip of each marshmallow in the chocolate. Then, dip into the graham cracker crumbs. To set and display your pretty pops, place in a large mug or bowl filled with chocolate chips or lentils to help keep them in place while they firm. Alternatively, you can place them on a plate or baking sheet covered with parchment paper.
  • You can also skip the lollipop sticks and simply line dipped marshmallows on a festive platter.

A fun twist:

  • Feel free to get creative with your graham crackers and opt for plain, cinnamon, chocolate, or a combination of all three. You can also use powdered or grated toasted coconut or finely chopped peanuts.
