I sauté the Beyond Beef crumbles with Tex-Mex flavorings—hello, zesty taco seasoning, ground cumin, lime juice, and zest—and spoon it over a bed of crunchy tortilla chips. Then, as the chef of your “nacho masterpiece,” you have the freedom to adorn them with an array of topping options. Picture this: sliced jalapeños for a spicy kick, black beans for added protein and fiber, sweet corn for a burst of freshness, aromatic cilantro and/or scallions, and a generous sprinkling of shredded Mexican cheese blend or a drizzle of queso for that ooey-gooey goodness.

Feeling saucy? When your nachos come out of the oven, you can elevate the experience with dollops of salsa, or add a cooling contrast with swirls of tangy Greek yogurt or light sour cream. Also, when I can find ripe avocados at the market, I love to chop them up and scatter them over the finished nachos before adding spoonfuls of sauce.

Watching your carb intake? Here’s a clever suggestion: Simply swap out the tortilla chips for quartered bell peppers (place cut-sides facing up), and you’ll transform this indulgence into a lower-carb dish without sacrificing flavor or satisfaction.

Better-for-You Loaded Nachos

Ingredients
 

  • 1 medium onion, diced
  • 16 ounces Beyond Beef, 1 package
  • 1 tablespoon taco seasoning
  • 1 tablespoon cumin
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • Salt and pepper to taste
  • 12 oz tortilla chips, 1 bag
  • 1 cup cheese, shredded Mexican blend or queso
  • Optional toppings: , black beans, corn, diced tomato, chopped scallions, minced cilantro, sliced jalapeños
  • Optional garnishes: , greek yogurt, salsa, hot sauce, chopped avocado

Instructions
 

  • Preheat oven to 425˚
  • Liberally mist a large skillet with oil spray.
  • Add onion and cook about 2 minutes. Add plant-based Beyond Beef and cook about 2 minutes, breaking up into smaller pieces as it browns.
  • Add taco seasoning, cumin, lime juice and lime zest. Cook about 4 more minutes. Season with salt and pepper to taste.
  • Spread tortilla chips on large baking sheet (or 2 smaller) in a single layer and spoon seasoned beef crumbles on top.
  • Add cheese and optional toppers, and bake for about 10 minutes, until chips are golden and crispy and cheese is melty.
  • Top with preferred garnishes and dig in!
