- 1 cup cooked brown rice
- 1/2 cup cooked black beans (if using canned, drain and rinse well)
- 1/4 cup salsa
- 1 teaspoon chopped cilantro (for optional garnish)
In a microwave-safe bowl, combine the rice, beans, salsa, and 1 to 2 tablespoons of water and mix thoroughly. Microwave for 2 minutes or until hot, and garnish with cilantro (if using)
