Margaritas are one of my all-time favorite cocktails. I whip up a watermelon version in the warmer months that’s a total hit in the Bauer house (I cannot make them fast enough). You can also skip the alcohol for a yummy lycopene-rich mocktail.

- • 2 cups diced watermelon, chilled
- • 2 tablespoons lime juice
- • 2 ounces tequila
- • 6 to 8 watermelon “ice cubes” (cut watermelon into small cubes and freeze)
Puree watermelon in blender for about 30 seconds, or until it becomes watermelon juice. Add lime juice and tequila and blend for another 5 seconds. Pour watermelon margarita into 2 glasses and add 3 to 4 watermelon “ice cubes” into each.
Garnish with optional watermelon slices on rim and enjoy.
Makes 2 servings (about 1 to 1½ cups each).
