Margaritas are one of my all-time favorite cocktails. I whip up a watermelon version in the summer that’s a total hit in the Bauer house (I cannot make them fast enough!). You can also skip the alcohol for a yummy lycopene-rich mocktail.

- • 2 cups diced watermelon
- • 2 tablespoons lime juice
- • 2 ounces tequila
- • 6 to 8 watermelon “ice cubes” (cut watermelon into small cubes and freeze)
Puree watermelon in blender for about 30 seconds, or until it becomes watermelon juice.
Add watermelon juice to a cocktail shaker with lime juice, tequila, and a few ice cubes. Shake well to combine everything. Then, discard ice cubes and pour watermelon margarita into 2 glasses containing 3 to 4 watermelon “ice cubes.”
Garnish with optional watermelon slices on rim and enjoy.
Makes 2 servings (about 1 to 1½ cups each).
