Margaritas are one of my all-time favorite cocktails. I whip up a watermelon version in the warmer months that’s a total hit in the Bauer house (I cannot make them fast enough).

You can also skip the alcohol for a yummy lycopene-rich mocktail.

Watermelon Margarita

I whip up a watermelon version in the warmer months that’s a total hit. You can also skip the alcohol for a yummy lycopene-rich mocktail.

Ingredients
 

  • 2 cups diced watermelon, chilled
  • 2 tablespoons lime juice
  • 2 ounces tequila
  • 6 to 8 watermelon “ice cubes”, cut watermelon into small cubes and freeze

  • Puree watermelon in blender for about 30 seconds, or until it becomes watermelon juice. Add lime juice and tequila and blend for another 5 seconds. Pour watermelon margarita into 2 glasses and add 3 to 4 watermelon “ice cubes” into each.
  • Garnish with optional watermelon slices on rim and enjoy.

Makes 2 servings (about 1 to 1½ cups each).
