Avocado Caprese Toast

By adding juicy, lycopene-packed tomato, protein- and calcium-rich mozzarella, fragrant basil, and a drizzle of balsamic glaze, you’ve taken a beneficial breakfast and transformed it into a meal to look forward to (cue the drooling!). Plus, you’ve given yourself even more chewing satisfaction, tons more flavor and oodles of extra nutrition. It’s a toast with the most!

Avocado Caprese Toast
Ingredients
- ¼ avocado, mashed
- 1 slice whole grain toast
- 3 to 4 tomato slices
- ¾ ounce mozzarella cheese, thinly sliced
- Basil leaves, torn into pieces
- Balsamic glaze
Instructions
- Spread avocado on whole grain toast and layer with sliced tomatoes, mozzarella cheese and torn basil leaves.
- Drizzle on the balsamic glaze and add a sprinkle of salt and pepper.

What do you use for balsamic glaze? How do you make it?
Hi Ginny! You can buy balsamic glaze (ready to go) in most markets, it generally comes in a small bottle next to the regular balsamic vinegar options. It’s a thicker, tangier, sweeter version of balsamic vinegar. It’s also easy to make it at home. Just simmer 1 cup balsamic vinegar over low heat for 15–20 minutes, until it’s thick and syrupy. Let it cool—it’ll thicken more as it sits. You can add 1 to 2 tablespoons honey (or 1/4 cup grape juice or OJ) to the pot while it simmers, to enhance the sweetness. If you go with the juice versus the honey, it will require more simmer time to fully reduce the liquid to a thick consistency (maybe 25 mins or so). It’s terrific for drizzling over salads, veggies, fruit… you name it!
