Chocolate lovers: This indulgent recipe may be the easiest and tastiest way to satisfy your cravings! Simply melt chocolate chips in the microwave and form them into small circles on a baking tray. Then top with sweet pomegranate seeds and crunchy crushed pistachios for a best-of-both-worlds flavor experience. I created these to mimic the beloved chocolate coins with an added nutritional flair. And, they are priceless!
You can make them for whenever a hankering for chocolate arises (stash them in the fridge or freezer to keep them fresh and firm). Enjoy just one or two, or serve up a batch for a crowd. They are irresistible.

- • ~2 tablespoons pomegranate arils
- • ~2 tablespoons crushed pistachios
- • Sea salt, optional
Line a baking sheet with parchment paper, dollop about a teaspoon of melted chocolate and swirl each into a small circular shape—at least the size of a quarter. Decorate with pomegranate arils, chopped pistachios, and a sprinkling of sea salt before putting them in the freezer to harden for a few hours.
