Easy Apple Pie French Toast
When apple pie meets French toast, you know it’s going to be a fantastic morning! This recipe cooks up in a single bowl in the microwave, so it’s easy-peasy prep and an even easier cleanup—a perfect start to your day.

This simple recipe is ideal for busy mornings when you crave a special breakfast without any fuss. With the warm, familiar flavors of apple pie, it’s great for enjoying solo, thanks to its perfectly portioned single serving. All you need are a few everyday ingredients—an apple, brown sugar or maple syrup, cinnamon, whole-grain bread, an egg, and a pinch of salt—then let the microwave work its magic! (P.S. If you’d like to cut back on the added sugar, simply swap stevia or monk fruit for the sweetener.) Easy Apple Pie French Toast
Ingredients
- 1 medium to large apple, finely diced, skin on
- 1 tablespoon firmly packed brown sugar or maple syrup*
- ¼ teaspoon ground cinnamon, plus more to taste
- 1 slice whole-grain bread, cut into small cubes*
- 1 large egg, lightly beaten
- Pinch Kosher salt
- Optional toppings: Whipped cream, maple syrup

Instructions
- Mix chopped apple with brown sugar or maple syrup and cinnamon in a small microwave-safe bowl. Microwave for 1 minute and stir. Add the bread cubes and egg, then stir to combine everything in the bowl.
- Add a pinch of kosher salt and a dash of extra ground cinnamon or apple pie spice, if desired. Place back in the microwave for 90 seconds or until the egg is cooked.
- Garnish with an optional squirt of whipped cream or a drizzle of maple syrup and dig in!

Hi Susan! Joy hasn’t tried this recipe with a flax egg, but it should work! To make this recipe egg-free, you can make a flax egg! Mix 1 Tbsp ground flaxseed (it must be ground!) with 2.5 Tbsp water and let it sit for at least 10 minutes to thicken, then use in place of the egg.
