Pimm’s Cup
If you’ve never heard of a Pimm’s Cup before, you are in for one sensational sip. It’s a deliciously refreshing citrus-ginger cocktail made with a gin-based liqueur—and it’s definitely worth trying.

Traditionally, it contains sugary soda or lemonade, but my rendition cuts way back on sugar by utilizing seltzer (aka sparkling water), freshly squeezed lemon juice and a dash of anti-inflammatory ginger root. Also, while this recipe calls for Pimm’s #1 as the spirit, you can certainly swap in a citrus-flavored gin or vodka. Just be sure to have fun with your garnishes—it’s like a garden in a glass!

Pimm’s Cup
Ingredients
- 1½ to 2 ounces Pimm’s #1 Liqueur
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey or maple syrup
- ¼ teaspoon grated ginger root, optional
- 1 cup lemon-flavored sparkling water/seltzer
- Garnish: slices of cucumber, lemon, strawberries, and mint leaves
Instructions
- In a highball (tall) glass, add Pimm’s #1 Liqueur, lemon juice, and honey, and give it a thorough stir to combine the honey. Next, add in optional ginger root, if using, and stir again.
- Then, add a generous handful of ice cubes and top it off with the lemon-flavored sparkling water/seltzer.
- Garnish with cucumber, lemon, strawberries and mint.
